Feeling Tropical: Fun Ways To Serve Fruit!

Let’s get back to the Tropics!
Hey there! Today I have two super easy and fun “recipes” (if you can even call them recipes) for the last hot days of summer. They are mostly pretty presentations than recipes. Were I live it feels like summer all-year round so these are great all the time!

You can obviously serve these for breakfast or for summer party snacks or picnics. Apparently, it seems like pineapples are on their best where I live. They are fresh and local, and they are everywhere! Last week I bought 2 for $15 pesos which is nothing! So with all this fruit available my mind was flying with ideas, as always.

So this is what I came up with: Pineapple Cups with Tropical Fruit!

Pineapple Cups with Tropical Fruit
1 medium pineapple, cubed
1 medium mango, ripe and cubed
1 cup ripe papaya, cubed

This is super simple to do. First cut the pineapple stem. Hollow the pineapple and cut it in cubes. Once your pineapple is empty, put part of the cubed pineapple, then mango and add then the rest of pineapple and papaya.
Serve this for your guests or treat yourself with a delicious breakfast!

Of course you can use any fillings! Any kind of fruits like kiwis and blueberries work fine too!

For the second “recipe” you’ll need watermelon and.. only watermelon! I served these the other days for my friends that came over. Watermelon Popsicles! Everyone loved it, it was a success and they enjoyed some refreshing watermelon popsicles with my all-time favorite mango summer parfait!

Frozen Watermelon Popsicles
1/4 large watermelon, frozen
Popsicle Sticks

Cut your watermelon in medium size rounds, then cut in 6 or 8 (depending on the watermelon size). Using a knife make a small cut on the watermelon’s green skin and introduce the popsicle stick. Freeze overnight.
Serve and enjoy cold!
**If not using the popsicle sticks just serve it like it shows in the picture and still is great!
**You can serve the watermelon not frozen too.

    • haha sorry, I never put how many servings because people’s appetite is always different. Sometimes for someone one recipe can serve 1 and for others it can serve 3-4. It depends on portions, when it comes to my salad and pasta recipes I normally eat the entire thing but the cookies or desserts I tend to eat a small portion and refrigerate the rest or something like that. The recipes always yield 1 big bowl of whatever it is: pasta, salads, tacos, rolls… and if it is way too much for yourself (which might be, my portions are pretty large) it probably would serve around 2-3 medium size meal portions.
      Hope that helps, about the Pineapple Cup it would serve at least 2-3 people’s breakfast if not used to eating big fruit quantities. :)
