The last few days have been super good! I’ve been doing so many things both at home and outdoors. The weather is hot and beautiful, and I’ve been eating so many refreshing things! Such a bliss!!

I’m super excited to share this one, it is of my favorites and I’m pretty sure many of you will like it. The video is short and you’ll see how easy it is to make them. With all the produce available here my mind is flying with new recipes!
Today’s recipe is so refreshing and tasty! I think it is one of my favorite things to eat during the summer. Specially with this heat! I think it will be perfect for the weekend so if you get a chance try it! You will impress everyone! Vegan or not!
The tacos have two sauces! Like I mentioned before, one of them is my mango-beet dressing to keep it low fat and fruity and another one is made with avocado. Both are delicious and make the tacos taste really different.
Gastrawnomica’s Jicama Tacos
1 large jicama, peeled and thinly sliced
Mango-Beet Dressing (with cilantro instead of mint & dill)
Avocado Green Sauce:
1 avocado, chopped
Juice of 3 small limes
1/4 cup red onion
2 Tbsp dried herbs
1/4 cup fresh cilantro
