With all the fresh produce available here in Mexico the only things I want to eat are tropical fruits and veggies! I’ve been enjoying the most delish mangos, pineapples, jicamas, papayas, plantains, avocados, cherimoyas, rambutan… Amazing!
So, the other day I wanted to make a new salad dressing using mangos, as I hadn’t had mangos with my salad in a really long time. I think you guys will like this recipe more than you think, it is super tasty, easy and different! Sweet and savory, yumm!
I’ll post the recipe here but I recommend you to watch the video to see how I served it and how it looked before mixing. It was super tasty, colorful and if you leave it for a couple of minutes (10-15) in the fridge before serving, it tastes like heaven!
Gastrawnomica’s Mango-Beet Dressing
2 ripe mangos
1/2 cup fresh beet juice
1/2 cup fresh herbs (mint, rosemary and basil)
2-3 cups greens
1 jicama, grated
1 cup celery, chopped
1 zucchini, spiralized
1/4 cup red onion, finely chopped (optional)
