Happy 4th of July everyone!
I hope all of you are enjoying and celebrating today! As some of you heard on facebook, a couple of days ago I shared a picture with a sneak peak of today’s amazing recipe! I knew I wanted to do something special for all of you proud American followers! So I created something that involved taste, a pretty presentation and of course the USA colors!
Because of the nice reviews I got of my
carrot cupcakes, I decided to make something similar, and it had been on my mind for a while, so this was the perfect occasion to do it! As you’ll notice in the video, these are super fun and easy to do. You’ll need few ingredients and only one kitchen appliance! Oh, and kid-friendly for sure!
Though it might sound weird that I used beets for the cupcake, let me tell you something, it was way better than what you think! I was a little nervous, unsure if it would taste as good as I wanted, but honestly, I ended up eating the whole cake batter that day. Heaven on Earth!!
This time I used figs instead of dates and I’m still “deliberating” which one I prefer the most. Dried figs gave these cupcakes the perfect sweetness and consistency.
Gastrawnomica’s Red Velvet Cupcakes
2 cups fresh beet pulp
1 cup raisins
3/4 cup dried figs
4 frozen bananas
1/4 cup fresh blueberries
*Vanilla extract is optional (for banana whip)
