Get Your Greens! “Spaghetti al Pesto”

This recipe is amazing if you’re wondering how to eat more greens and you’re tired of salads or just green smoothies, believe me, this sauce is PACKED with greens.

Like most of my recipes, this will take you less than 10 min and will feed 2-4 people. You can follow the instructions in the video, and like I said there, you can omit the avocado but it definitely made a big difference!


Gastrawnomica’s Raw Pesto Pasta
1 medium jicama
1 large zucchini
*If you don’t have jicamas do all zucchinis
1 cup fresh basil
1 large celery stick, chopped
1/2 cup fresh cilantro
1 big lime juice
1 small garlic clove
1 Tbsp dried italian herbs
1/4-1/2 avocado
4 medjool dates, soaked and pitted
Water as needed
Mix in:
1 cup chopped celery
1 portobello mushroom, sliced
1 cup fresh spinach

Follow video instructions. You can add fresh tomatoes or any other favorite veggie!
