Hello! Happy Monday everyone!
I’m back in Montreal, back at school and old routine! My days at Costa Rica are definitively over but I feel my heart is still there, I guess it won’t be until a couple more days that I will get completely grounded. I had so much fun that I’m seriously starting to think it was one of the best weeks of my life (so far).
Today, as I promised, I will share all about the last dinner I had in Costa Rica. We prepared a lot of raw foods for everyone and everything was so delicious!
I took advantage of the moment and put my hands to work! I used some of the recipes from Gastrawnomica, but mostly it was like a “make your own” kind of thing, with a lot of different toppings and many many awesome ingredients. Everything was from the local farmers market, so fresh and pretty much organic.
We made huge salads with different greens mainly spinach and different types of lettuce. Between the toppings we had fresh cucumber, zucchinis, pineapples, carrots, chives, radish, pears, zucchini, red peppers, guacamole, oh my goodness and it goes on and on! One of the only things non-raw there were some fried plantains in coconut oil that everyone seemed to love!

There were 3 different dressings, two were 811 and one was a sun dried tomato-olive oil dressing. Both 811 dressing are here, I made the strawberry-date dressing but instead of using dates I used dried bananas, which was the only thing on hand, and instead of orange juice I used the banana water. The other one was pineapple, soaked sun dried tomatoes and dried bananas.
And last but not least: dessert! We had two options, a raw pie or fresh fruit. We served a pile with green and purple “caimitos” I have no idea of the name in english so google it! haha
The raw pie was delicious! I only had a tiny bite because when I went to get my piece it was already gone! I didn’t do it so from what I remember the crust was almond butter and dried bananas, then it had a layer of papaya and pears with a sauce of berries and more fruit layers with other things but it was super delish!
