Today I have some news for you.. I’m participating in the Hot Raw Chef 2012 Sweet Valentine Video Recipe Contest!! I’m so excited my words can’t describe it! This is my first time doing a recipe contest and whether I win something or not, I’m having so much fun just by being part of it! My recipe for this contest is a beautiful, light and colorful salad.
Appart from being so easy to make, it really is tasty and of course full of vitamins and minerals. Perfect!
I called it Strawberry-Tangerine Salad, or to make it short let’s call it “Berry-Gine” Salad, yum! If you want to make it you can follow the video instructions, but I’ll post the complete recipe here anyways. Gastrawnomica’s “Berry-Tangerine” Sweet Salad
Yields around 4-5 individual servings.
2-3 cups fresh arugula and spinach (you can use other you prefer)
420 grs. jicama, cubed
1/4 cup fresh cilantro, chopped
2 medium-large tangerines/mandarines
1 cup fresh or frozen strawberries
4 medjool dates, soaked 10 min
1/2 cup fresh apple juice
1 Tbsp poppy seeds
1 Tbsp dried herbs (oregano, basil, rosemary and thyme)
