I hope everything is going great. My time in Mexico is passing by so fast! I don’t want to go! Christmas is just around the block! I’ve been making so many things I don’t know where to start.
Anyways, I’m loving my time here, as well as the weather, which has been pretty hot!
I have so many recipes that I will have something to post until January! I’ve been making more videos and I have some of them ready, but I won’t post all of them at once. I will share today a fast and easy recipe I made this past week and I hope you give it a try!
Mandarin-Berry Pasta Salad
2 cups spinach, chopped
1 medium jicama, peeled and spiralized
8 medium mandarines, seedless
1 cup blackberries, fresh or frozen
Handful of fresh herbs (basil, cilantro or parsley)
Put the spinach in the bottom of a bowl. Top with spiralized jicama. Peel and separate 6 mandarines in segments and add to salad bowl.
Using a high speed blender, mix blackberries, 2 mandarines (no seeds!) and fresh herbs. You can add more blackberries if desired.
Toss pasta salad with dressing and mix. Serve and enjoy!
