I’m back in Mexico for the holidays and I’m having a blast. Today was my mom’s birthday and we celebrated all day long. I’m enjoying every single minute of my time here. I’ve been enjoying my family’s company, great weather, lots of sun and just everything about it!

Priscilla’s Barney Salad
1 medium jicama, grated
2 cups fresh blueberries
1 medium ripe pear, peeled
Blend blueberries and pear. Toss jicama with dressing and mix well. Enjoy!
