Happy Monday everyone!
Lately I’ve been enjoying some really easy and delicious raw warm soups. The weather really makes me crave something warmer, so today I’m going to share 3 different recipes and I’m sure you’re gonna love them! They will take you less than 10 minutes. I didn’t took pictures of all of them because I didn’t knew if it was going to be yummy or not so I kind of figure out I should have taken some pictures after it was already gone.
Green Pea Soup
1 cup green peas
1/2 bunch parsley leaves
1/2- 1 cup warm water
1 lime or lemon juice
Onion, chopped (to taste)
Blend all ingredients until smooth. Adjust water until right consistency. You can actually substitute the water with almond milk for a creamier soup. Also, feel free to add more fresh herbs according to your taste preferences.
A few days back I found a huge bag of organic carrots in really good price so I took it, and I made this super easy soups.
1 pear, peeled and chopped
1 apple, peeled and chopped
6 large carrots, peeled and chopped
1 1/2 tablespoons onion, chopped
1/4 clove garlic (optional)
1/2 teaspoon thyme
1/4 teaspoon nutmeg
Put all ingredients in a food processor or any type of blender. Blend until smooth. You can add water if needed.
3 large carrots, chopped finely
1/4 chopped onion or chives
Juice of two oranges
1/4 tablespoon fresh ginger
1 zucchini, peeled and chopped or a yellow summer squash, unpeeled and chopped
Blend until smooth and serve with a few leaves of fresh basil, parsley or dill. Or a few chopped almonds.

Today I’m sharing a recipe so simple that will take you 5 minutes to make it and will make your day even sweeter! This are super easy, fast and simple “cookie balls” that you can eat for breakfast or snack.
I made this with some banana milk and I was in heaven! It felt so “homey”.
6 medjool dates, pitted
1/2 cup dried figs
1/2 cup dried cranberries
3 tablespoons dried coconut
1 teaspoon fresh orange zest
2 ripe bananas
Water as needed
First you need to mix the cookie ingredients in a food processor until you have a dough. Take the dough out and give it shape. Let the cookie balls sit while you make the milk.
Blend the bananas with the water, adding more or less, until you have a milk-like cosistency and the bananas are completely blended. You can add a date if you want it sweeter.
Chill and enjoy cookies with milk.

If there’s durian in heaven count me in! Haha.. Into another topic, I’ve been looking for a champion juicer lately, I want to be my own Santa Claus this christmas and I’m dying to have a CJ so if anyone knows about a good special let me know!
And just to finish this post don’t forget about your daily exercise! Which is as important as eating properly and having a good night sleep. According to Harvard’s Men’s Health Watch “aerobic exercise is the key for your head, just as it is for your heart. It has a unique capacity to exhilarate and relax, to provide stimulation and calm, to counter depression and dissipate stress. Endurance athletes commonly experience the restorative power of exercise, and this has been verified in clinical trials that have used exercise to treat anxiety and depression.” So this is one more great tip to add some happiness to your daily life!

So I’m back in Montreal after a really long and heavy journey. My 10 days with Arnold and everyone there were amazing! I have no words to describe how much fun I had, how much I learned and what a beautiful way to spend my time it was! I met amazing people and I was able to open for the first time and share my story, with the goal of helping people who are passing through something similar or just simply by sharing my knowledge in how a vegan and raw diet have been very beneficial for me. Arnold taught me so much and he says he learned a lot from me too so I’m happy that we could help each other.
Last day I was there we made our final video with Abdul. He has known Arnold for a long time now. A couple of days before he went to the store looking for him because he had an asthma attack and first thing he thought was “I need to go to Arnold’s Way”. When he came (I was there) he looked kind of scared, we can say he was worried and Arnold had a “chit chat” with him. After he told him exactly what happened Arnold specifically said to him you’re going to take your inhaler and your gonna throw it out haha, crazy right? He told him to take some green smoothies for the rest of the day and take with him some bananas. Next day he came and he said that after only drinking one of the smoothies the asthma symptoms had already disappeared! Isn’t it amazing?
Anyways I leave the video here where he shares the story and how even though he hasn’t changed his diet completely since he incorporated more raw foods he has seen the benefits.
Hope you guys like it and as you can see I was definitively tired. Those were 10 very intense days, so these next couple of days I’ll be having my beauty sleep, I’ll try to rest as much as possible to get my batteries on again and be ready for the next adventure!

And the other recipe is for zucchini spaghetti which most of you already know, but if you don’t let me tell you is going to blow your mind! Is a great way to start incorporating raw foods in your daily meals and also is super easy and delicious!

Spaghetti with Tomato Sauce
Red Bell Pepper
I don’t put measurements because it all depends on you, if you want it chunky add more mango and less tomato, if you want it like a sauce put more tomatoes, if you want it to be sweet are more dates and to give it a “punch” put red pepper. No salt, oils or additives. If you want saltiness use celery. Oh, and fresh herbs always give the sauce an amazing touch, in the video we didn’t used but I always put some fresh basil parsley or cilantro and it tastes like heaven.
Breakfast is even simpler:
Dried Fruit (Your favorites: dates, raisins, figs, blueberries…)
Blend everything in food processor until you have a puree. Top with dried fruit. Put as much apples and pears as you want to as well as dried fruit on top.

So I’m at Arnold’s Way right now, and even though I’ve been spending most of my time here since I came, every day is just so different! New people come every single day, others come to say hi, others hoping to find Arnold and have a chat with him and others simply come to enjoy the food. Everyday is so interesting. I learn something new every single moment, not just from Arnold, but from everything that is surrounding me. Even when there’s free time at the store the are so many books on hand, uff! Too much information! This is my last week here so I’m trying to make the best out of it.
Yesterday I saw a very funny post at The Consumerist, “Burger King Billboard Gets Diabetes Graffiti”, shared by someone on facebook. I guess the picture speaks by itself.
Anyways, we made a video yesterday after the 8am class with one of the women who has been assisting to them. Her name is Sue Ellen and she shared her story of how after only 9 weeks going raw vegan and drinking 1-2 green smoothies daily she has already experienced amazing benefits and changes not just in her health but also in the way she feels. This is one more story of hundreds out there who have experienced the benefits of eating a vegan diet and making healthy food choices.
She talks about her 30 lbs weight loss, insomnia and thyroid problems gone and how after taking 3-5 pain pills daily she now stopped completely.

So today has been a very busy day, I was supposed to go back to Montreal but definitively my time here is not over! We had a class from 8-10 am around 15 people came and they all had tons of questions, we have another one from 6-8pm, plus the restaurant, banana whips.. EXCITEMENT !! This was my breakfast by the way, have I said before how much I love banana whips? Gosh I need a champion juicer !!
One thing I’ve noticed is that people come with so many questions about what to eat, how to eat it, at what time… Everything looks so complicated for them, but I always try to give them my best tips and complication is definitively not involved. So, today I’m sharing a video with 3 fast and easy recipes. They are great for kids and fast snacks when you don’t have time for complicated meals or you’re so hungry you can not wait more than 5 minutes to eat. Remember simplicity and a few flavors never fail. The recipes are high carb as always, salt free and low fat, but don’t hesitate in giving them your own touch and add or mix and match with different fruits and ingredients.

Sorry I couldn’t post before but we went to visit Philadelphia early in the morning and we came back late. This was my first time there, loved it! It’s a beautiful city, we walked all day long, so much to visit! Then we went to Whole Foods for some lunch and for dinner I had the best durian ever!! I had tasted it before but never really tried it, it was delish!
Anyways, I leave a video we made a couple of days ago for carrot cupcakes, high carb and raw vegan! Hope you try it and let me know what you think.
